Custard

Ingredients

  • 250 ml (1 cup) milk
  • 125 ml (1/2 cup) cream (35%)
  • 60 ml (1/4 cup) sugar
  • 45 ml (3 tbsp.) all-purpose unbleached flour
  • 3 egg yolks
  • 5 ml (1 tsp.) vanilla flavouring

Preparation

  • Heat the milk and cream. Let stand.
  • In a separate bowl, whip the egg yolks and sugar until a batter forms.
  • Add the flour.
  • Slowly add the milk and cream while stirring.
  • Place in a double boiler and cook for 20 minutes at low heat while stirring occasionally until mixture thickens.
  • Remove from heat and add the vanilla.
