Custard
Ingredients
250 ml (1 cup) milk
125 ml (1/2 cup) cream (35%)
60 ml (1/4 cup) sugar
45 ml (3 tbsp.) all-purpose unbleached flour
3 egg yolks
5 ml (1 tsp.) vanilla flavouring
Preparation
Heat the milk and cream. Let stand.
In a separate bowl, whip the egg yolks and sugar until a batter forms.
Add the flour.
Slowly add the milk and cream while stirring.
Place in a double boiler and cook for 20 minutes at low heat while stirring occasionally until mixture thickens.
Remove from heat and add the vanilla.
